Do I have to leave Colorado?
Life just isn't fair. I'm definitely going to miss the cold nights and cold mornings, the sound of the Delores river right outside my window, the beautiful stars against an expansive sky, and the gentle whispers of the aspen trees rustling in the wind. Colorado is surely a place to be!
Baked Honey Berry Oatmeal
BAKED BERRY OATMEAL

Healthy, delicious, and filling! This baked oatmeal is chock full of berries, pecans, and the perfect amount of sweetness.

INGREDIENTS
- Dry Mixture:
- 2 cups quick-cook oats (see notes on quick-cook vs. rolled)
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp salt
- ⅓ cup packed brown sugar
- Wet Mixture:
- 2 cups nonfat milk
- 2 eggs
- ½ tbsp vanilla extract
- 3 tbsps honey
- 1½ tbsp melted butter
- 2 cups frozen mixed berries
- ¼ cup pecans, separated
INSTRUCTIONS
- Preheat oven to 375 degrees.
- In a medium sized bowl, mix together the oats, baking powder, cinnamon, salt, and brown sugar. Set aside.
- In a seperate bowl whisk together the milk, eggs, vanilla, honey, and butter.
- Layer half the berries in a 2 quart baking dish and top evenly with the dry oat mixture. Pour on the wet mixture, then add the rest of the berries on top along with the roughly chopped pecans.
- Bake for 15-20 minutes or until the oats have absorbed the liquid. Serve hot or cold!
NOTES
If using non-quick cook oats, increase your baking time to 35-40 minutes.

Strawberry Frozen Yogurt
5-Minute Healthy Strawberry Frozen Yogurt
Yield: 4 servings
Prep Time: 5 min
Ingredients:
4 cups frozen strawberries
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice
3 Tablespoons agave nectar or honey
1/2 cup plain yogurt (non-fat or full fat)
1 Tablespoon fresh lemon juice
Directions:
Add the frozen strawberries, agave nectar (or honey), yogurt and lemon juice to the bowl of a food processor. Process until creamy, about 5 minutes.
Serve the frozen yogurt immediately or transfer it to an airtight container and store it in the freezer for up to 1 month.
Kelly's Notes:
I prefer a more tart frozen yogurt, but you can add additional agave nectar or honey if you want a sweeter-tasting dessert.

Fresh strawberries can be used in place of frozen, however the fresh strawberries must be frozen solid.
